The Heritage Story of Crispy Hoppers (Appa)
Hoppers are an architectural culinary marvel. A light batter of fermented rice flour, rich coconut milk, and a splash of coconut water is ladled into a piping-hot, wok-shaped miniature pan called an "Appa Thachchiya". The cook expertly tilts and swivels the pan with both wrists in a fluid circle: the outer rim crisps into paper-thin, golden lacy frills, while the center pools into a soft, pillowy, cloud-like sponge.
